Wholesome Coconut Ice

This is so simple, sweet and coconutty, and it is coloured with just a little raw beetroot. Chemical colours in packaged food are responsible for many health and behaviour problems in children, and as you can see approaching this naturally can be so easy and effective! Most importantly you do not taste the beetroot in the end result.

A great afternoon sometimes food for the kids

Ingredients:

  • 2 cups preservative free shredded coconut
  • 2 tbsp Ayam’s coconut cream
  • 1-2 tbsp rice malt syrup or maple syrup, to taste (less is more!)
  • small pinch Himalayan salt
  • 1 tsp real vanilla paste, or to taste

Top:

  • 2 cups shredded coconut
  • small piece of raw beetroot, grated (less than 1 tbsp)
  • 2 tbsp Ayam’s coconut cream
  • 1-2 tbsp rice malt syrup or maple syrup, to taste (less is more!)
  • 1 tsp real vanilla paste, or to taste

Method:

1. Place base ingredients in a food processor and blender and blitz until it comes together- do not make it overly smooth as it will have a sandy texture.

2. Press into a freezer container lined with baking paper.

3. Place all topping ingredients in a blender and blend until it comes together. Press on top of base.

4. Set in the freezer. Slice and enjoy!
