Warm Super Food Salad with Avocado Mayo

All of the ingredients in this salad are superfoods in their own right- add them together and you’ve got a seriously flavour and nutrition packed meal!  11301570_10205779279354247_591289658_n

Ingredients:

  • 1 large red Chili, deseeded and finely chopped
  • 2 cloves garlic, shaved finely
  • 1 Tbsp Cold Pressed Olive oil
  • Himalayan Salt, to taste
  • 1 bunch Curly kale, stalk removed and torn into bite size pieces
  • 2 heaped tbsp kalamata olives
  • 1 cup roasted Pumpkin, skin on
  • 2 tbsp goji berries, rehydrated in filtered water
  • 1 tbsp raw Pumpkin seeds
  • 1 tbsp Toasted almonds or pine nuts
  • Preferred Sprouts to garnish, optional

  • Flesh of 1 Avocado
  • 1 tbsp extra virgin olive oil
  • 2 tsp maple syrup, or to taste
  • 1 small garlic clove
  • 1 good handful basil leaves
  • Himalayan Salt, to taste

Method:

  • Gently fry the chili and garlic in the olive oil in a non stick pan for about 1 minute so the flavours infuse into the oil, ensuring the garlic does not burn. Add the kale and toss to coat in the oil and slightly wilt. Remove after 30 seconds.
  • Add the dressing ingredients to a blender or food processor, and blend until smooth. Add a dash of water if needed to achieve desired consistency. Taste and adjust salt and maple syrup seasoning to taste.
  • Layer the kale with the olives, nuts and seeds, pumpkin and sprouts. Serve with a large dollop of avocado dressing.

Optional: Add Grilled Wild Caught Salmon (pictured), chicken, poached or boiled egg or grilled haloumi cheese for extra protein

Serves 2 as a main or 4 as a side
