Smokey Paprika Wedges

I have to admit I am quite happy to sit down to a plate of these and nothing else for dinner! They are my guilty pleasure… without all the nasty fats you get in the fast food kind of course! Your whole family with love these, and of course you can adapt with your fav spice mixes.

Ingredients: Chipped

  • 4-6 potatoes, peeled and sliced into wedges (or as many as you need)
  • Extra Virgin Olive Oil
  • Good Quality Smokey Paprika Powder

Method:

Par boil the wedges in a saucepan of boiling water until almost tender. Meanwhile preheat your oven to 200C, placing the oven tray in the oven to preheat also.

Drain potatoes well. Coat well with a generous amount of olive oil and paprika. Transfer in one layer to the hot oven tray- you should already hear a nice sizzle. Place in the oven and cook until crunchy, tossing once or twice as needed.

Suggestions:

I like to serve with my clean Aioli (from my Wholesome Kids ebook), which is a blend of plain yogurt and crushed garlic or smoked garlic. Guacamole also works well.
