Rawsome Chocolate Energy Balls

Shhhh….Dont tell the kids these are healthy!

I have found that there are so many recipes out there for raw nut balls, but the simplest of ingredients always taste the best! If you like to pimp yours up with all sorts of super foods such as goji berries, maca powder, spirulina etc, then please go ahead, so long as you find them equally as soul satisfying this way. I personally recommend introducing them to your kids in the most simplistic way.

Watch how the kids and I make these here: http://youtu.be/R8FCNxEChvg

Create your own fav recipe!

• 3 cups any raw nuts (almonds & macadamias work best for a sweet, cake like texture)

• 1&1/2 cup pitted dates (or your favourite dried fruit)

• 3 Tbsp Extra Virgin coconut oil

• Seeds of one plump vanilla pod

• 3-4 Tbsp Raw cacao- to taste

• ½ cup desiccated coconut

• 1-2 cups extra desiccated coconut for rolling

Other Variations:

•Choc Peppermint: add mint essence & ½ cup cacao nibs to add a crunchy texture. They taste like mint slice biscuits! YUM

• Jaffa: add orange essence to taste

• Choc Beetroot (the kids will be clueless): add beetroot pulp left over from juicing.  This adds richness and extra fibre & nutrients. Delish!

• Chocolate Monkey- add 2-3 dried bananas.

1.  Process the nuts until they resemble fine breadcrumbs. Add all remaining ingredients and continue processing until very smooth and mix starts coming together in a ball- this is the secret to well formed balls. Taste and adjust any flavours or textures if needed. You do not want the mixture too wet as they wont hold their shape, or too dry that they wont stick together. If the mix is too dry add more coconut oil. If it is too wet add more desiccated coconut or cacao. You can sweeten more with rice malt syrup if necessary for your taste buds, but will be healthier without this and usually won’t need it.

2.Roll into balls between your hands and then in coconut. I store mine and eat straight from the freezer.

Serving Suggestion:

These guilt free balls are simply delicious and SATISFYING! They contain nourishing, nutrient dense ingredients that release energy slowly- so they are a perfect treat for children’s lunch boxes or for energy on the run – providing they last that long! Replace almonds with sunflower seeds f your school is a nut free zone.
