Paleo Slow Cooked Mexican Chipotle Pulled Pork

Mexican is one of the easiest cuisines to recreate with cleanness and deliciousness. All the yummy trimmings such as salsa and guacamole are fresh and nourishing, and the blend of Mexican spices packs some serious flavour.

  • 1 Pork shoulder
  • 1 can diced tomatoes
  • 2 chipotle chilies in adobo sauce, optional but recommended
  • 1 red onion, finely diced
  • 2 cloves garlic
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp oregano
  • 1 tbsp Smokey paprika
  • 1 tbsp honey
  • 2 tbsp red wine vinegar
  • salt to taste

Place all ingredients into the slow cooker. Set to 6-8 hours, or cook until you can easily shred the meat with 2 forks.

Serving suggestion: 

Serve stacked on sweet potato fries or stuffed whole baked sweet potato, with guacamole and fresh salsa.
