Kale Slaw With Miso Dressing

So fresh and light, this is one of my fav detox salads or summer sides, and a great way to enjoy kale

  • ¼ Red cabbage
  • 2 carrots
  • 1 cup finely shredded kale
  • 1 tbsp black sesame seeds

Miso Dressing:

•1 tbsp organic non GMO miso paste

•Juice 1 lime

•1-2 tsp maple syrup, to taste

•one splash sesame oil

•2 tsp tamari sauce, to taste

•1 tsp grated fresh ginger

Optional:

  • Add a grated apple for sweetness
  • Mix green and red cabbages
  • Mix it up with a creamy Thai dressing or Mexican lime and jalapeño dressing

Method:

Finely shred all of the vegetables with a food processor, mandolin or knife. Blend

dressing in a blender with a splash of water if needed, or whisk by hand. Gently toss the dressing through the salad, and garnish with sesame seeds.
