Healthier Choc Chip Cookies

It was a cookie kind of day! My kids are really getting into the fun of being in the kitchen, and I believe supporting the joy and magic of cooking and eating from scratch is the very best way to build a healthy food culture in the home and ensure your children are diverse eaters. We do our  best to  make everything as healthy as possible, always from a whole food source, however life is about balance and an occasion indulgence is part of this. Some simple upgrades with ingredients make all the difference.

  • 150g organic butter
  • 150g coconut sugar
  • 2 tsp vanilla, 1 egg
  • 225g spelt flour
  • 1/2 tsp aluminium free baking powder
  • 1 block 90% Lindt cut into chunks.

Method: Cream butter and sugar, beat in egg and vanilla. Sift in flour and baking powder and fold together until smooth. Gently mix in chocolate. Roll into balls and flatten slightly. Bake at 180C for about 15min. ENJOY! I used my new non-toxic non-stick ceramic baking tray from
