Creamy Macadamia Ice Cream

This Wholesome macadamia ice cream is dairy and refined sugar free, yet so creamy and delicious! This is one of the best recipes I have tasted for a healthy version of ice cream-You wont believe it could be so wholesome. 


  • 2/3 cup raw macadamias, toasted lightly in the oven
  • vanilla to taste
  • 2 tbsp rice malt syrup*
  • 400ml coconut cream
  • 2 egg yolks

Method: 1. Whisk egg yolks and sweetener in a bowl over simmering water until it has doubled in size and is light and fluffy- 2-3 min.

2. Whisk in coconut milk, followed by vanilla and macadamias. Allow to cool.

3. Place in an ice-cream maker and let it work its magic. If you do not have one you will have to place in a container in the freezer and whisk with a fork every hour or so until set. With my ice cream maker the texture is perfect- just like ice-cream! If you love ice cream I recommend investing in an ice cream maker so you can make healthy ice cream. *You can use raw honey if you prefer. Rice malt syrup is fructose free which is better for weightloss and sugar cravings, plus it has a neutral flavour. Honey will add a honey flavour and contains fructose.
